Grilled Pork Tenderloin and Peach Sub Sandwich

pound pork tenderloin |
| |
Salt and pepper |
| 4-6 |
tablespoons barbecue sauce |
| 1 |
fresh peaches, cut in half and pitted |
| 1 |
fresh plums, cut in half and pitted |
| 1 |
tablespoon butter, melted |
| 4 |
LeFrancais French Sub Rolls |
| ¼ - ½ |
cup corn relish |

Lettuce or arugula |

Prepare medium hot fire in grill.

Season tenderloin with salt and pepper to taste.

Grill tenderloin over direct heat for 15-20 minutes, turning to brown evenly and to an internal temperature of 155° F.

Baste with barbecue sauce while it is cooking.

Remove from grill and set aside.

Place peach and plum halves on grill.

Brush each side with butter.
-
Cover grill and cook until charred and softened - 3-5 minutes per side.

Build sandwiches in rolls, starting with sliced tenderloin.

Top with sliced peaches, plums, corn relish, and lettuce. Enjoy!
